Q: During bloodborne pathogens training, is it okay to defer the question-and-answer part until later and then answer by e-mail?

A: No, says OSHA's Electronic mail systems and bloodborne pathogens training requirements letter of interpretation.
The standard requires "an opportunity for interactive questions and answers with the person conducting the training session." Enforcement Procedures for the Occupational Exposure to Bloodborne Pathogens defines interactive as "direct access to a qualified trainer during the training session." Unless you are online while the training and questions occur, your e-mail responses won't comply with the standard.
