That's a healthy meatball

The Swedish meatballs at Chicago's Swedish Covenant Hospital just got a little healthier, thanks to the kitchen's switch to pure grass-fed beef that is raised without supplements or growth hormones. Following a national trend toward offering hospitalized patients more diverse and healthier menus, Swedish has also added organic vegetables and fruits to its menu.
"We viewed the introduction of more organic foods as part of a broad program aimed at providing a home-like atmosphere during a stay at our hospital," says Maria Simmons, patient food services manager. "The feedback we've had from patients so far is extremely positive."
